When the sailboat cabin is hot because it’s summer (or lucky you are in the tropics) a quick and easy dinner is really appreciated. I’ve made up a yummy dish, so we think and hopefully you will too.
4-6 Shrimp per person
Sweet Rice Flour (corn starch if you don’t have)
Sweet Red Chili Sauce (Asian Section)
Dark Sweet Soy Sauce(Asian Section, it tastes like soy with molassas in it.)
Pick one: Asparagus, green beans, zuccini, peas
Peel and clean shrimp. Sprinkle enough flour on plate to dredge (drag through) shrimp and add 1/4 teaspoon pepper. Thin slice vegi of choice and set aside. Set out plates and drizzle 1/4 teaspoon of Dark Sweet Soy over plate for shrimp and follow with 1 teaspoon of Sweet Red Chili Sauce.
Dredge shrimp through the seasoned flour. Heat 1 tablespoon oil in fry pan on med. high heat. Cook vegies for about a minute and add shrimp cook until they are pink turning once. Turn off heat and add 1/4 cup of Sweet Red Chili Sauce to shrimp and vegies, toss to coat. Plate on the drizzle of sauces and serve with rice.
