How can you make omelets for a hungry crew without slaving over the stove? Easy! You make piles of everything you have on hand to put in the omelets. Cheese, onion, mushroom, left over bits of bacon, sausage, shrimp, steak, crab…the list is endless.
Then you mix up a batch of eggs, two per person plus 2 tablespoons of water per person and mix in a measuring cup or if for a really large crew a pitcher. Then you give each person a zip lock type plastic sandwich bag and they write their name in perminate marker on the bag and add what ever ingredients from the piles they’d like. You pour the eggs into the bag and then carefully ’squish’ the air out as best you can and zip it closed. Be sure the closing is tight!
Then you put all the bags of omelets into a pan of boiling water, being sure no bags hang over the pan sides. Bring water back to a boil, cover and simmer 18 minutes. Yummy omelets, clean pan and hot water for cleaning up! The perfect sailboat omelets.
