What do you do when you have bananas growing out of your ears?  You’re tired of banana nut bread but the yellow darlings are starting to take on the color of night.  On a sailboat, these are wonderful in the morning or late night with a hot cup of tea or coffee.

2 C flour

2 1/2 tea baking powder

1/2 tea salt

1/2 C butter, softened

1 C sugar plus 1 Tab set aside

2 eggs

1 tea vanilla extract

1 1/2 C mashed (about 2) very ripe bananas

1/4 C milk

1/2 tea ground cinnamon (mix with set aside sugar)

Pre  heat oven to 375* F. (190C)

Butter a dozen muffin cups.  Mix dry ingredients (except sugar)  together.  Cream in seperate bowl butter and sugar.  When light and fluffy add eggs 1 at a time, then add vanilla and then add milk and mashed bananas.  Add dry mix and stir just until mixed.  Spoon into muffin pan and sprinkle with set aside cinnamon/sugar mix.  Bake about 30 minutes or until toothpick inserted in center of muffin comes out clean.  Cool 5-10 minutes and remove from pan.  Makes about 12 muffins.
