One of the great things about traveling is trying out the local food and beer.  While in Martinique, many years ago, my hubby and I tried out the local brew…Lorraine Beer.  If you are lucky enough to be on the hook in St. Anne, Martinique you can try this…if you’re like us and not there, then your favorite brew will do.My hubby in St. Anne

 

 

 Lorraine Beer Chicken

1 Whole chicken cut in to pieces

¼ C oil

1 C coconut milk (I use the canned stuff…)

1 bottle of beer (Lorraine if you’ve got it)

1 yellow onion, chopped

1 red bell pepper, chopped

salt and pepper

Salt and pepper the chicken and fry in oil until browned on all sides.  Drain out oil and chicken fat.  Add coconut milk and beer to chicken and simmer covered about 40 minutes.  Add the pepper and onion and simmer until all is cooked through, about 30 minutes.  Add more beer if you find the liquids are drying out too much, of course you use the liquid as a gravy over the chicken when you serve it.  Plus you can server the gravy over rice too.Hubby with Lorraine Beer
